Brown Gravy Instructions
Beef Gravy Step 1: In a medium sauce pan sauté the shallots, garlic and herbs in the oil on medium high heat.
Beef Gravy Step 2: Once caramelized, deglaze with the sherry and cook out the alcohol (2-3 minutes).
Beef Gravy Step 3: Add the beef stock and season with salt & pepper. Simmer for 20 minutes on medium heat. Strain and set aside.
Beef Gravy Step 4: In a saucepan melt the butter. Whisk in the flour and sauté for 4-5 minutes to cook out the flour. Slowly whisk in the hot stock, whisking constantly to avoid lumps.
Beef Gravy Step 5: Bring to a low boil to thicken.
