Caramelized Onions Steps: Using a Japanese mandolin, julienne the onions very thin. In a large sauté pan melt the butter and add the onions. Chive Butter Steps: Mix all in ingredients until fully incorporated. Uses immediately or spread into a 1” log on parchment paper. Roll tightly into a tube and twist ends to seal. Store in the freezer and use as needed.
How2 Assemble: Cool the bread completely before slicing. It helps to freeze it for 10-15 minutes prior to slicing to help it from falling apart.
Slice bread into ½” thick slices and smear a thin layer on the chive butter on one side of two pieces of cornbread.
Layer shredded Gouda and the caramelized onions between the buttered bread.
In a hot sauté pan on medium heat grill the buttered side until golden brown on both sides.
